It’s a new day in America. By now, you probably already know someone who’s received a dose of the vaccine. A safe return to restaurants, movie theaters, sports arenas and family reunions might still be months away, but there appears to be a light at the end of the tunnel. So, go ahead. Fantasize.
Research shows that daydreaming about a positive future and better days helps us get through dark times. Our imagination gives us hope — whether it’s realistic dreams of hugging your parents or an elaborate fantasy about eating a white truffle risotto on a terrace on the Amalfi Coast. Social distancing and quarantining remain a large part of our current reality. But today, let’s imagine the good times ahead. The tasty times on the horizon. A serving of optimism, if you will.

I'm dreaming of hosting backyard pizza parties. I want to have DOZENS of friends and family over on warm evenings. Everyone will sit at those long, thin, wooden folding tables they have at German beergardens. I'll sling sourdough pizzas in my soon-to-be-completed wood-fired oven and make extremely elaborate salads and folks will bring nice beer and wine. For desert we'll have fresh fruit or homemade ice cream. There will be fun music and we'll all get a little tipsy and dance.
I can't wait to be able to sit indoors at our local wine bar, chat with strangers and the bartender, and share a cheese plate with a friend! Really just any food-sharing with friends sounds so wonderful right now. I miss potlucks!
I'd commit crimes to be basking in the reflection off the Med on a yacht docked in Monte Carlo right now with a Zalto glass full of DRC Montrachet and a dozen escargot.
Right before the pandemic hit, I was planning a trip to Perú 🇵🇪 Of course, I hoped to see Machu Picchu and the Nazca Lines. But more than anything, I dreamed of indulging in one of the Americas' best culinary traditions. Peruvian food is legendary. Several of the world's best restaurants are around Lima. Ceviches! Causas (these circular potato casseroles)! Papas a la Huancaina! I'd even eat chicken for the first time in years if I could order a plate of my old favorite Aji de Gallina.
My mouth is watering just thinking about it. And of course, no meal there would be complete without a classic Pisco Sour cocktail. Wow, it really does feel good to write out your foodie fantasy 🤤
Eating out at Seminole near Steven's hotel with my entire Florida family. They make the best eggplant parmigiana. This would be a wonderful food fantasy, along with a delicious glass of wine. Miss my Family so much.
I am yearning for the simple pleasures right now. The corner pub near my house. A big table on the sidewalk in the afternoon spring happy hour sun. Live music. House made soft pretzels served warm with cheddar mustard sauce. Local dry cider. And a rotating selection of any and all of my favorite people. I would just hang out for hours, and anyone who wanted could come and go, stay as long as they want, meet new friends. Sigh.
I’m looking forward to eating a “Veterinarian’s midnight snack” in Copenhagen. It’s an open face sandwich that involves rye bread, liver pate, raw onion and aspic. Add other options, like pickle. With a Carlsberg beer.
I would love to be sitting on a cruise ship. Cruising around Japan ports and eating great authentic Japanese food such as sushi, soba and vegetarian sukiyaki! I would be seeing beautiful temples, beautiful gardens, enjoying onsen, seeing Mt. Fuji and visiting the Peace Memorial in Hiroshima.
